The Colony

Rated as one of Singapore’s best buffets, The Colony at The Ritz Carlton is a place you should dine in! And the dining here won’t burn a hole in your pocket, as their lunch buffet is priced at $58++ on weekdays and $62++ on weekends. That’s really affordable for a five-star hotel.

The Sandwich Corner. Marked by rustic ciabatta bread, this station is filled with rows of gourmet sandwiches. You can also choose to customise your own sandwich and take your pick of condiments, including pickled olives and anchovies.

Next to it is the very popular “Ice Bar”, serving fresh seafood such as scallops, marinated sea squid, Australian black mussels, snow crab legs and poached prawns. The prawns are sweet and firm, while the snow crab legs are nicely sliced open for diners’ easy picking.

The Dragon Chamber

Back in the days where leaders of the Chinese secret society would have meetings and run gambling dens behind the facade of kopitiams and shophouses, the Dragon Chamber is a new restaurant for (secret) gatherings.

Tucked away at a corner of Circular Road, you will see this “kopitiam” selling wanton mee. Hidden behind the drinks refrigerator in the kopitiam, enter it and you’ll find yourself in the realm of said secret society. With a 93-seater space, the place boasts a bar, a private dining area and an even more private VVIP room.

This isn’t your typical wagyu beef dishes.
With wok fried hor fun, truffle gravy, perfectly poached egg and the premium A4 Kagoshima Wagyu, mix them together and you’ll find deep-fried hor fun strips, adding a wonderful and addictive crunch.

The Firecracker Chicken and Maple Fritters is a spiced-up fusion version of deep fried diced chicken in Sichuan peppercorn, as well as cashews and chives. It goes very well with the cruncy maple-bathed fritters! The Dragon Chamber is an immersive experience both physically and gastronomically; offering a menu worthy of adventure and a return journey, as well as the amazing atmosphere perfect for history or film junkies.

One of Asia’s TOP 50 restaurant, Nouri brings you “crossroad cuisines” as what Chef Brehm would like to call it - an exploration of ingredients and cultures from different regions. Nouri refers to the word nourish, a reference to the food served at the restaurant nourishing the diners; but Brehm also hopes that the name will inspire people to be kind to others.

For dinner, the 5-course Chef Tasting Menu is S$145++, 7 course at S$175++, or you can go for lunch from S$85++ for its 5 course Omakase Lunch Menu.

Based on the reviews online and Chef’s recommendation, you must try the signature dishes Acaraje and Vatapa – Afro-Brazilian fritter, turmeric and coconut sauce, bread and salted prawn vatapa; Black Pepper Fish – Raymond’s grouper, black pepper and vanilla sauce, charred pickled carrot; and Big Red Robe which features different textures of plum, Mirabelle plum fluid gel, chocolate moelleux and oolong tea.

There are a lot of praises given to Nouri with having most of the dishes being impeccable. The service has also gotten pleasant feedback. In summary, it is well-deserved of its Michelin-accolade.

JAM at Siri House

Located in Dempsey Hill, JAM at Siri House should be your next dinner choice for small plates dining. Siri House is Thai luxury property developer Sansiri’s effort to bring all the elements of his living environment to a dining place. From design, art, retail to food. The latter is where JAM comes in and these can be seen from the interior of the restaurant with the lavishness of Sansiri lifestyle: crystal chandeliers, mismatched colors chairs and pillows and an art deco kitchen counter and bar. Surprisingly, with such opulence and extravagance decor, the place still somehow manages to make you feel at home.
The whole homely experience will start with JAM’s cocktail trolley loaded with bottled cocktails and aperitifs.

While the cocktail bar is overseen by the beverage director and founder of Sunday Punch, Mark Tay, the open kitchen is directed by former Lolla head chef and co-owner of Park Bench Deli, Chef Tan Hua Ming.

Scallop Carpaccio (Image credit: citynomad)

The thick cuts of fresh hand-dived Hokkaido Scallops are drizzled with yuzu and truffle dressing. Portion is relatively large which also means your bucks are going to be pretty well spent here.

Handmade Pappardelle with Tiger Prawns (Image credit: citynomad)

A lot of reviews sang praises to their handmade pappardelle with tiger prawns. The pasta comes tossed with a full-flavoured sauce, made by reducing prawn and lobster broth in butter for a good eight hours. Definitely a must order dish to share even if you’re really stuffed.

This newly opened restaurant has by far received many recommendations. The team behind JAM at Siri House knows what they’re doing, without unnecessary fanfare yet keeping the essence of the dishes.

The lavish dishes include Crudo red deer paired with ZeĢn prestige caviar (as shown above), blue lobster, black truffle and sea urchin.

The last leg of the meal - desserts are served on the top floor of the restaurant.
Different from the traditional fine dining, Restaurant Zen gives a more relaxed ambience. “There will be Guns N’ Roses and AC/DC playing from the speakers,” says the chef when he gave an exclusive interview with The Sunday Times. “No jazz or piano music - more rock ‘n’ roll. We want to have fun and we want our guests to have fun even though we are very serious about our food.”

The atmosphere of the restaurant is cozy and quite personal due to the limitations of only 14 seats. It is a personal experience as you have a counter seat witnessing how the chefs prepare your meal.

Here at YOSHI Restaurant, you have 4 fine dining options: Omakase (multiple dishes are specially chosen by the chef), Maguro Menu Kaiseki, Beef Kaiseki as well as Uni Kaiseki. You can also choose sake pairing to go with your meal for an even more intense dining experience. The dishes here are freshly imported from Tokyo’s Tsukiji Market, hence all the ingredients here are extremely fresh and supple. Below are some of the dishes that you can expect from YOSHI:

Red House Seafood

Established in 1976, Red House Seafood has been serving Asian Seafood dishes for 42 whopping years! Over the years, the restaurant has evolved with the country’s growth and identity, representing the palette of flavors that reflect Singapore’s cultural diversity.

The main reason why Red House Seafood’s signature dishes have survived over the years is because they are determined to use only fresh ingredients and these ingredients are sourced from all over the world. The chefs also worked tirelessly over the years to integrate the essence of Malay, Indian and Peranakan flavors into their dishes. Needless to say, their signature dishes are, of course, their seafood:

Fig 2 - (sethlui) Wok Fried & Tossed in White Pepper; Fig 3 (misstamchiak) Signature Creamy Custard Sauce

Other than the signature seafood, they also have a Dimsum Lunch option which was introduced this August. There are a variety of Dim Sums, and they are better than expected! One of the all-time-favorites is the Truffle Wild Mushroom Dumplings, where the truffles do not overpower the dish and are nicely balanced.
